Paneer, or Indian cottage cheese, is the most common Indian cheese made by curdling heated milk using an acidic food like lemon juice or vinegar.  It has soft and smooth consistency similar to that of firm tofu.

Paneer has a simple and fresh versatile nature which can absorb other flavors very well. Since it is made with whole milk, it serves as a good source of protein making it a sound addition to a vegetarian diet, practiced by Hindus throughout India.

The paneer takes on a very delicious robust flavor.  It is a great appetizer which will be equally loved by both vegetarians and non-vegetarians.  This recipe can be adapted to potatoes wedges as well.

INGREDIENTS SPICES
  • 1 pound paneer, cubed
  • 2 tbsp chick pea flour
  • 1 tbsp ginger, finely grated
  • 1 tbsp garlic, finely grated
  • 3 cups vegetable oil, for frying
  • 1 tbsp chaat masala
  • 1/2 tsp salt
  • 1/2 tsp chili powder


Method for Preparation

  1. Cut the paneer into 2″ long and 3/4″ wide pieces.
  2. Spread them out loosely on large tray.
  3. Mix chick pea flour and all the spices in a bowl.
  4. Evenly coat the cheese pieces with the spice mixture.
  5. Combine the grated ginger and garlic in a separate bowl and add 2 tbsp water to the mix.
  6. Squeeze out the mixture reserving the fluid at the bottom of the bowl.
  7. Sprinkle garlic and ginger juice on the paneer pieces mixing it very gently.
  8. Heat oil in a deep frying pan about 350 degrees F.
  9. Add 6-7 pieces at a time. Fry the pieces for approximately 2 minutes or until golden brown.
  10. Repeat with the remaining pieces.

Serve hot with mint chutney.  Can be garnished with onion rings and lemon slices.
